I love serving this hummus with warm pita bread for a tasty appetizer or snack. It’s also quite excellent when slathered on sandwiches and wraps, and as a dip for fresh vegetables.

Roasted Sweet Potato Hummus

1 medium/large sweet potato, peeled and chopped into 1/2-inch cubes (about 4 cups)

1 Tbsp canola oil

1/2 tsp salt

1/4 tsp pepper

1 cup chickpeas, rinsed and drained

1/3 cup extra virgin olive oil, plus more for drizzling

1/3 cup water

1/4 cup fresh lemon juice (1-2 lemons)

2 Tbsp tahini

2 garlic cloves, smashed

1 tsp za’atar

1 tsp sumac

1/4 tsp red pepper flakes or cayenne pepper

salt and pepper to taste

Red pepper flakes, sumac, and za’atar, for garnish

pomegranate arils, cilantro or mint leaves, for garnish

1. Preheat the oven to 375 F. Line a rimmed baking sheet with parchment paper.

2. In a large bowl, toss together the chopped sweet potato, canola oil, salt, and pepper. Spread the sweet potato in a single layer on the prepared baking sheet and roast for about 30-35 minutes, stirring occasionally. The sweet potato will be golden and tender when done. Remove from the oven and let the sweet potato cool down to room temperature.

3. Place the roasted sweet potato, chickpeas, olive oil,water, lemon juice, tahini, garlic, and spices in a food processor fitted with a metal blade. Process until smooth, scraping the bowl once. If the hummus is too thick, thin with a bit more water. Adjust the seasoning with more salt and pepper.

4. Transfer the hummus into a shallow serving bowl. Drizzle with olive oil and sprinkle the top with red pepper flakes, sumac and za’atar. Garnish with pomegranate arils and cilantro. Serve with warm pita bread, crackers, and fresh vegetables. Refrigerate the hummus for up to three days. It can be frozen for up to three months. Makes about 2 1/2 cups of hummus.

Note: Look for za ‘atar, sumac, and tahini in the International Foods aisle of the supermarket. Sumac has a bright flavour reminiscent of vinegar or lemon. Za’atar is a mixture of sumac, sesame seed, and herbs used throughout the Middle East and Mediterranean.
