Ideally, you’re aiming for 43 to 50 degrees F, which is just warmer than your refrigerator. If you have a garage or cellar, those areas of the home that tend to stay around that temperature. Keeping the potatoes cool will allow them to last for months and preserve their vitamin C levels.

But avoid tossing your potatoes in the refrigerator or freezer. If that happens, some magical science turns the starch into reducing sugars which can produce carcinogenic substances. At freezing temps, the water content inside a raw potato expands and starts to break down the cell wall, making it all mushy, brown and gross.

Store them away from light.

If your potatoes start to turn green, the best thing to do is throw them away. Green skins mean the potato has started producing chlorophyll, which happens from sun or fluorescent light exposure. At high levels, this can lead to the production of solanine, a toxic chemical. Although this isn’t too common, because many countries limit the amount of solanine in commercial potatoes, keeping your ‘taters out of the light will take away this concern altogether.

Keep those babies dry.

By that we mean don’t wash them. It seems a little odd considering they were grown underground and are likely covered in dirt, but just trust us. Washing them before storing them adds moisture. You know who loves moisture? Fungus and bacteria. But don’t worry. Once you’re in the mood for some potatoes, you can wash them before you cook them.

Store potatoes in a paper bag or open container.

So, we just talked about moisture. Potatoes need air flow to prevent any accumulation of moisture. The worst way to store them is in a sealed bag or container. Keep them in something that allows for air flow and circulation.
