Idaho's most famous crop, the potato isn't actually native to this area. The first potato in America was planted in New Hampshire in 1719 and was known as the "Irish Potato" since the plants came from Ireland. A missionary named Henry Harmon Spalding brought the potato to Lapwai, Idaho in 1836 to teach the Nez Perce tribe how to grow their own food instead of having to rely on hunting and gathering methods. They were the first to cultivate and sell potatoes in the area.

Idaho leads the nation in potato production producing nearly 1/3 of all U.S grown potatoes. In 2019, the annual production amount was about 130.9 million cwt of potatoes. Washington came in second with a production amount of 103.1 million cwt. Idaho's rich volcanic soils, warm days and cold evenings are what make these potatoes grow well. Russets are the most popular potato grown in Idaho but there are an additional 30 varities grown such as Yukons, Golds, Fingerlings and Reds.

• The word Potato comes from the Spanish word "Patata".
• Potatoes are about 80% water and 20% solid.
• Thomas Jefferson gets credit for introducing french fries to America after he served them at a Presidential dinner at the White House.
• Of course the potato state has a "Potato Museum", it's located in Blackfoot, Idaho. 
• In 1995, the potato became the first vegetable to be grown in space. 
• World record breaking largest potato grown was 10lb and 14oz and was grown by an amateur in the UK in 2011.
• The potato is considered the fourth most important crop behind rice, wheat and corn.
• Potatoes dont just make amazing meals, side dishes and snacks they also are used to make alcohol like vodka.
