New potato-centric restaurant Jacked Potato to open in Converse outside San Antonio - San Antonio Express-News

Jacked Potato, a new restaurant that elevates the spuds from trusted side to star of the show is set to open Wednesday in Converse.

The restaurant, located just off FM 78 near Crestway Road, will be open from 11 a.m. to 4 p.m. at launch. It will feature a lineup of stuffed baked potatoes, sweet potatoes and salads, including options loaded with meatballs, shrimp etouffee, pulled pork, bacon, eggs, avocado slices and much more.

Owner Jacci Castille, a disabled U.S. Army veteran, discovered her passion for tricked-out baked potatoes as a means to feed her two vegetarian daughters. In 2017, she decided to rent out a commercial kitchen and sold her potatoes throughout the area for extra income. Then she got the idea to start her first brick and mortar restaurant.

“We ate so many potatoes that you had to get creative with them so you didn’t feel like you were eating the same thing every day,” Castille said. “Then I started selling them and doing some research, and discovered that San Antonio didn’t have anything like this. They are really popular in England.”

Castille, a San Antonio native, said customers should come to her restaurant with an appetite. The potatoes, with prices that range from $8.25-$9.50, weigh in at 1 pound or more, and that’s before the toppings are piled on.

Customers can also build their own spud in typical fast-casual fashion with a large variety of meats, cheeses, vegetables and other toppings. Dessert is also on the menu with four different sweet potatoes, decked out with chocolate, marshmallows, peach cobbler, pecans and fruit.

Jacked Potato will have limited 11 a.m. to 4 p.m. hours, before starting a full-time schedule Feb. 20.
