GRAND RAPIDS, MI — At Load-a-Spud Potato Bar on Madison Avenue SE in Grand Rapids, co-owner Michael Buxton prides himself on the size of the meals he serves his customers.
“It’s a great product for your buck, great customer services, fresh food, fresh vegetables — and guaranteed two meals,” he said. “I stand behind it. I’m 6′2, 225 pounds, and I can’t finish it.”
Load-a-Spud, which has locations in Grand Rapids, Kalamazoo and Chicago, offers 20 signature baked potatoes, each of which weighs at least one pound and is topped with an array of meat, vegetables, cheese and sauce.
One of the most popular varieties is the taco potato, which is topped with seasoned ground beef, lettuce, tomato, onions, and taco sauce.
“It’s like eating a taco in a bowl,” Buxton said.
Another popular variety is a chicken and shrimp alfredo potato.
“You’ve got your white meat chicken, you’ve got your shrimp, and then we top it off with Alfredo sauce and all your vegetables,” Buxton said. “It’s hearty, and it’s just real good. They love the alfredo sauce. That’s one of our top three sellers.”
Customers also “love” the pulled pork potato, Buxton said.
“You’ve got the pulled pork, the barbecue sauce, and then your veggies and your cheese,” he said.
Load-a-Spud also sells salads and tacos.
The restaurant is located at 1721 Madison Ave. SE, and is open Monday through Saturday from 11 a.m. to 9 p.m. Its menu can be seen online here, and it can be reached by phone at (616) 258-8002.
Load-a-Spud’s potatoes range from $8.99 for the Taco Potato to $11.99 for the Meat Lover’s, which is topped with chicken, bacon, ground beef and steak. A potato with cheese only is $6, as is a potato topped only with butter and sour cream.
