Baked sweet potato chips that will knock out regular potato chips - Daily Californian

There are many things we cannot all agree on in this world, but our love for potato chips is definitely something we can. National Potato Chip Day was Saturday, and we can’t help but appreciate potato chips for being one of the most satisfying snacks to indulge in — crispy, crunchy and just the right amount of salty to keep your taste buds dancing and begging for more. Drenched in oil and fried until all the moisture is sucked out of them, potato chips only have one negative aspect: They’re not all too healthy. Baking potatoes is a deliciously healthy alternative to frying them as it requires far less oil, and it’s less dangerous because you won’t have hot oil splattering all over you.

Potato chips are great, but we have to say sweet potato chips might be slightly better if you’re looking for something on the sweeter side. Sweet potato chips are a perfect combination of potato chips’ saltiness and sweet potatoes’ sweetness. Plus, when baked, it’s almost comparable to the crispiness and crunchiness of potato chips. These sweet potato chips are extremely easy to make. All you need to do is slice, season and bake, and you’re all set! Full of flavor, these sweet potato chips can be eaten alone or can be paired with your favorite dipping sauce — we highly recommend maple mustard!

Ingredients

Sweet potato chips

  • 3 large sweet potatoes, peeled (We used golden sweet potatoes)
  • ¼ cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Maple mustard dipping sauce

  • ¼ cup mayonnaise 
  • ¼ cup spicy brown mustard 
  • 2 tablespoons pure maple syrup

Preheat the oven to 400 degrees Fahrenheit and line your baking pan. Using a mandolin or a sharp knife, slice the peeled sweet potatoes into uniformly thin pieces. You want the slices to be thin in order to achieve the ultimate crispiness of potato chips. In a large mixing bowl, coat the slices in olive oil, salt and black pepper.

Next, spread the slices out on the baking pan and bake them for about 12 minutes per side or until they’re golden. While you wait for the sweet potatoes to bake, combine the mustard, mayonnaise and maple syrup in a small bowl. And you’re done! Allow the chips to cool for about 15-20 minutes before indulging!
